Ingredients:
Pasta & Protein:
12 oz rotini pasta
2 boneless, skinless chicken breasts, diced
8 oz smoked beef sausage, sliced
2 tbsp olive oil
Cajun Sauce:
2 tbsp Cajun seasoning
3 tbsp unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
¼ cup chicken broth
½ tsp paprika
¼ tsp black pepper
Optional Garnish: Fresh parsley, chopped
Instructions:
Cook the Pasta:
Bring a pot of salted water to a boil, cook pasta until al dente, then drain and set aside.
Prepare Chicken & Sausage:
Heat 1 tbsp olive oil in a skillet over medium heat. Season chicken with 1 tbsp Cajun seasoning, cook until golden, then remove. In the same skillet, cook sausage slices until slightly browned, then set aside.
Make the Sauce:
Using the same pan, melt butter and sauté garlic for 1 minute. Add heavy cream, chicken broth, remaining Cajun seasoning, paprika, and black pepper. Stir and let it simmer.
Add Cheese:
Gradually stir in cheddar and Parmesan until smooth and creamy. Adjust seasoning if needed.
Combine & Serve:
Return the cooked pasta, chicken, and sausage to the skillet, tossing everything in the sauce until well coated. Garnish with fresh parsley and serve hot.
