Ingredients:
For the Grilled Chicken:
2 boneless, skinless chicken breasts sliced into tenders
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
tsp dried oregano
tsp salt
tsp black pepper
1 tbsp fresh parsley chopped
1 tbsp lemon juice
For the Sweet Potato Fries:
2 medium sweet potatoes cut into fries
1 tbsp olive oil
1 tsp paprika
tsp garlic powder
tsp salt
tsp black pepper
For the Avocado Salsa:
1 avocado diced
1 cup cherry tomatoes halved
red onion finely chopped
1 tbsp fresh cilantro chopped
1 tbsp lime juice
Salt & pepper to taste
For the Dipping Sauce:
cup Greek yogurt or sour cream
tsp garlic powder
tsp dried dill
tsp lemon juice
Salt & pepper to taste
Step by Step:
1 Prepare the Sweet Potato Fries:
Preheat oven to 400F 200C.
Toss sweet potato fries with olive oil, paprika, garlic powder, salt, and black pepper.
Spread on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through until crispy.
2 Marinate & Grill the Chicken:
In a bowl, mix olive oil, garlic powder, onion powder, paprika, oregano, salt, black pepper, parsley, and lemon juice.
Coat chicken tenders evenly with the marinade and let sit for 10 minutes.
Heat a grill pan or skillet over medium heat and cook chicken for 5-7 minutes per side, until golden and cooked through.
3 Make the Avocado Salsa:
In a bowl, combine avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper.
Gently toss and set aside.
4 Prepare the Dipping Sauce:
In a small bowl, mix Greek yogurt, garlic powder, dried dill, lemon juice, salt, and pepper.
Stir well and refrigerate until ready to serve.
5 Assemble & Serve:
Plate the grilled chicken, crispy sweet potato fries, and avocado salsa.
Serve with the creamy dipping sauce on the side.
