Ingredients:

4-5 lbs beef brisket (trimmed)
Salt and pepper to taste
4 cloves garlic (minced)
1 large onion (sliced)
2 large carrots (peeled and cut into chunks)
2-3 large potatoes (peeled and cut into chunks, optional)
1 cup beef broth
½ cup apple cider vinegar
¼ cup brown sugar
2 tbsp Worcestershire sauce
2 tbsp tomato paste
1 tbsp smoked paprika
1 tbsp chili powder
1 tsp cumin
1 tsp dried thyme
2 cups BBQ sauce (store-bought or homemade)
Instructions:
Prepare the Brisket:
Season brisket: Season the beef brisket generously with salt and pepper on all sides.
Sear the brisket (optional): In a large skillet over medium-high heat, sear the brisket for 3-4 minutes per side until browned. This step adds extra flavor but can be skipped if you’re short on time.
Prepare the Slow Cooker:
Add vegetables: Place the sliced onion, carrots, and potatoes (if using) in the bottom of the slow cooker.
Add brisket: Place the seasoned brisket on top of the vegetables.
Prepare the Sauce:
Mix sauce ingredients: In a medium bowl, whisk together the beef broth, apple cider vinegar, brown sugar, Worcestershire sauce, tomato paste, smoked paprika, chili powder, cumin, and dried thyme.
Pour over brisket: Pour the sauce mixture evenly over the brisket.
Cook the Brisket:
Slow cook: Cover the slow cooker and cook on low for 8-10 hours, or until the brisket is tender and easily shreds with a fork.
Finish and Serve:
Shred the brisket: Remove the brisket from the slow cooker and let it rest for a few minutes. Shred or slice the brisket against the grain.
Combine with BBQ sauce: Return the shredded or sliced brisket to the slow cooker and mix with the BBQ sauce. Let it cook for an additional 20-30 minutes on low to allow the flavors to meld.
Serve: Serve the brisket with the cooked vegetables and extra BBQ sauce on the side. This dish pairs well with sides like coleslaw, cornbread, or mashed potatoes.
