Soul Food Plate: Lamb Chops with Mashed Potatoes, Roasted Carrots, and Green Beans 

A savory, rich meal with tender lamb chops, creamy mashed potatoes, perfectly roasted carrots, and fresh green beans, all drizzled with a delicious sauce that takes this plate to the next level!

 Ingredients:

For the Lamb Chops:

4 lamb chops

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp honey

1 tbsp balsamic vinegar

1 tsp rosemary (or thyme)

Salt and black pepper, to taste

1 garlic clove, minced

For the Mashed Potatoes:

4 medium potatoes, peeled and cubed

1/4 cup butter

1/2 cup heavy cream

1/4 cup milk

Salt and pepper, to taste

Chopped parsley, for garnish

For the Roasted Carrots:

3 large carrots, peeled and sliced

2 tbsp olive oil

1 tsp honey

1/2 tsp cinnamon (optional)

Salt and pepper, to taste

For the Green Beans:

1 lb fresh green beans, trimmed

2 tbsp butter

1 garlic clove, minced

Salt and pepper, to taste

 Instructions:

1. Prepare the Lamb Chops:

In a bowl, combine olive oil, soy sauce, honey, balsamic vinegar, rosemary, garlic, salt, and pepper.

Rub the marinade onto the lamb chops and let them marinate for at least 30 minutes to an hour.

Heat a skillet over medium-high heat and sear the lamb chops for 3–4 minutes per side until golden and cooked to your desired level.

Let the lamb chops rest for a few minutes before serving.

2. Make the Mashed Potatoes:

In a large pot, boil the cubed potatoes until tender (about 15-20 minutes).

Drain the potatoes and return them to the pot.

Mash them with butter, heavy cream, milk, salt, and pepper until smooth and creamy.

Garnish with chopped parsley before serving.

3. Roast the Carrots:

Preheat the oven to 425°F (220°C).

Toss sliced carrots in olive oil, honey, cinnamon, salt, and pepper.

Spread them evenly on a baking sheet and roast for 20-25 minutes, stirring halfway through, until tender and caramelized.

4. Cook the Green Beans:

In a skillet, melt butter over medium heat and sauté minced garlic until fragrant.

Add the green beans and cook for about 5-7 minutes, until tender yet still crisp.

Season with salt and pepper to taste.

5. Serve:

Plate the lamb chops over a bed of mashed potatoes.

Arrange the roasted carrots and sautéed green beans on the side.
